Tea Recipes

Tea is amazingly versatile. Apart from the traditional methods of enjoying the beverage, you can use innovative ideas to drink tea. You can ice it, spice it, cream it, punch it or even eat it. Here are some recipes that are simple and yet delicious. Let your imagination run and see the difference you make to the usual brew.

An Indian way to savor the loveable Chai!
  3 teabags black tea
4 cups water
A 3 inch cinnamon stick
1 inch piece of ginger sliced
1/2 tspn green cardamom seeds
1/2 tspn black peppercorns
1/2 tspn whole cloves
1 tspn whole coriander seeds
1 cup milk
Honey or other sweetener to taste
  Boil water and add the spices. Cover and simmer 20 minutes. Add teabags and steep 10 minutes. Add milk and heat to drinking temperature. Do not boil. Strain and serve with sweetener.

Lemony tea that refreshes the tired mind, body and soul!
  Water (depending on how much tea you want to make)
Tea (depending on the water you take)
  Brew the tea as you would like it. In a hot cup of tea, squeeze a few drops of lemon. Add sugar. Stir and enjoy. Lemon tea does not need milk.

The Indian style chai with a saffron…
  2 cups water
2 cups milk
3-4 whole cloves
1 stick cinnamon
3-4 cardamom pods
A pinch of saffron
Sugar to taste
½ cup black CTC tea
  Bring all the ingredients except the milk together to a boil. Add the tea and let it steep for a while. Add the milk to the tea spice mixture and heat. Do not boil. Strain and stir in sugar to taste.

Taste black tea with a saffron flavor
  4 bags tea (golden green preferably)
6 green cardamoms
4 tspn sugar
1/2 tspn saffron threads
4 cups water
  Add the cardamom, sugar and saffron to the water and bring to a boil. Simmer until reduced by half. Bring to a boil again. Add tea bags and steep for 8 minutes. Strain and serve.

MINT TEA (Makes 4 drinks)
Minty tea that tastes better on a hot evening!
  600ml strong CTC tea
175gm castor sugar
Juice of a lemon
300ml fresh orange juice
75gm strawberries (hulled and sliced)
Half an orange sliced
Mint sprigs
  Stir the tea and sugar together till the sugar has dissolved. Add the lemon and orange juices. Cover and chill. Pour into a punch bowl and add the ice cubes and sliced fruit. Decorate with mint springs to serve.

LEMON FLAVOURED TEA (Makes 6 drinks)
Cold tea with lemon flavor…
  750ml strong Indian black tea
1 bunch mint leaves crushed
12 scoops lemon sorbet
Mint sprigs
  Stir the tea with crushed mint leaves. Let it stand for 30 minutes. Strain and cool. To serve put 2 scoops of lemon sorbet each into six tall glasses. Pour the mint tea over and decorate with mint sprigs.

The usual cold tea that is easy to make and loved universally!
  Water (depending on the number of cups you wish to make)
Tea (preferably Darjeeling tea)
Ice cubes
Sugar syrup
Lemon slices
Sprig of mint
  Take fresh water from the cold tap and boil. Put 2 teaspoonfuls of tea into the teapot for each person to get strong brew. Pour the boiling water and cover teapot and wait for at least five minutes. Fill three-fourths of a large glass tumbler with ice cubes. Pour tea from the teapot. Add sugar syrup and sliced lemon to taste, but no milk. You can add a sprig of mint.

TEA FRUIT CUP (Makes 12 drinks)
A fruity way to have tea…
  125 gms sugar
4 cups water
½ cup strong fresh tea, strained & cooled
1/2 cup fruit syrup
1/2 cup orange squash
1/2 cup lemon squash
1/2 cup pineapple squash
1 small bottle lemonade
12 fresh or canned cherries
2 bananas
Ice crushed
  Boil the sugar in ½ cup of water for 5 minutes. Add the cooled tea, the rest of the water, the fruit syrup with the fruit squashes. Chill the mixture. Just before serving, add the other ingredients along with the crushed ice.

TEA PUNCH (Makes 12 drinks)
An exotic cocktail of fruits and tea…loved by young and old!
  1 cup strong tea
180 gms sugar
1 cup orange squash
4 tbspsn lemon juice
2 small bottles ginger ale
1 large bottle lemonade
1 orange, sliced
  Put the hot tea in a bowl. Add the sugar. Stir until the sugar dissolves well. Add the orange squash and lemon juice. Strain the mixture. Chill well and when ready to serve, mix in the ginger ale, lemonade and orange slices.

TEA ICE CREAM (Makes 2 lbs ice cream)
Another variation to making tea ice cream!
  75 gms dry tea (choose one with good flavour)
450 gms refined sugar
25 gms arrowroot or corn flour
1 kg fresh milk
½ cup Water
  Heat some water and remove from fire when boiling and rinse the teapot with the hot water. Put in tea leaves. Pour boiling water into teapot and let it infuse for 8 to10 minutes. Strain and keep aside. Now boil milk. Next, blend sugar with arrowroot (or corn flour) thoroughly and add to boiled milk. Let mixture simmer for about 10 minutes. Stir continuously to avoid lumps. Remove from fire add the strained tea infusion. Stir well and freeze.
